First day of spring!!

If you are in California you could probably care less about this post, but today is the first day of SPRING!!!! Us east coasters are excited for the sun and soon to be rooftop celebration season! A toast to warm weather right around the corner baby ;)

Coffee or tea?

I really wanted my usual coffee with vanilla creamer (which I'm sure is loaded with all kinds of good things for me). But alas I opted for green tea instead. Not as much fun on a cold day like this...but hopefully I won't have that midday crash coffee always tends to give me. We shall see.

Collard green wraps

I almost made refried beans with eggs on a tortilla for lunch...but fought the urge and made this instead: Collard green topped with hummus, sprouts, tomatoes, avocado, cucumbers and a side of quinoa. This blog is really helping me stay on track! :)

One of the many reason I heart NY




Because this was at my front door when I walked out in the morning: the finish line to the NY Half Marathon 2013. If you've ever ran a race before, you know the finish line is the biggest rush one can experience. There are no words to describe that feeling of accomplishment and energy coming from the crowd that is such a rush. I wasn't even running the race and I got chills watching these folks cross the finish line. A toast to them!

A toast to shots of green smoothies! I recently started drinking green smoothies in the morning because I found myself always feeling tired and realized I wasn't eating healthy. So far these have given me more energy. It's also been an easy way to get my greens and fruits. This recipe includes: 2 cups water, 2 collard greens, 2 cups spinach, 1 apple, 1 banana, celery, 1/2 cucumber, 1 tbsp almond butter, 1 tsp coconut oil. They are actually very delicious. Cheers!

A toast to dinner!

For dinner tonight I made a spinach salad topped with lean turkey meat, organic chopped tomatoes, and fresh salsa. It sounds plain, but it was delicious. 



A toast to lunch!

Today I made rainbow quinoa wraps with corn, red peppers, and cucumbers on top of organic spinach and olive hummus. So yum.
