Back To The Blog - Thanks To Juno!

I am embarrassed to admit my last post was almost exactly a year ago and I never followed up with my 3 day cleanse. Well- thanks to NYC winter storm Juno I am now sitting at home with nothing to do (cars are not even allowed on the road past 11 tonight due to the storm) so I decided to get back on the pony and write in my deserted blog again. I'm baaaaccck! I am currently whipping up some vegan breakfast dishes for tomorrow that I just learned about. Here is a picture of me prepping both:


The recipe for the one in the big red bowl is:

1 cup rolled oats
1.5 cups almond milk
1/4 cup chia seeds
1 banana mashed
1 tablespoon of raw cocoa powder

These need to soak overnight so I will show you what it looks like tomorrow, along with some crazy whiteout photos from the storm. Also, since it's been a year since I posted and lots has happened (including me getting married to my best friend and love) here is a wedding photo of us on our beautiful wedding day in Costa Rica :)

A Toast To Juicing!

Wow it's been awhile since I posted. What can I say...life takes over sometimes but I have to share my excitement over finally getting a juicer (after literally thinking about it for a year). Not sure why I waited so long, but it happens. I will post my new juice recipes as I make them to give myself some motivation. So far they have all been delicious! Here is a picture of my first homemade juice and juicer. 

My first juice recipe included: carrots, beets, spinach, apples, cilantro, and a teaspoon of turmeric. It was super delicious. I honestly feel like I'm drinking pure energy when I drink raw juice and it's much cheaper making my own than buying the $11 juices at the stores in NYC. I am going to do a 3-day juice cleanse on Monday and will post my progress.

6 Calorie Kelp Noodle Pasta

Just made a kelp noodle dish for the first time and I loved it. Kelp noodles have a very similar consistency to pasta noodles with only 6 calories per serving and a lot of vitamins. To make I just heated up organic marinara sauce, added fresh basil, spinach, and red peppers. Also topped it with some nutritional yeast for a bit of a cheese flavor and hemp seeds. Cayenne pepper lastly for a little kick. Enjoy!

Green Smoothie

I have been experimenting with green smoothies for awhile now and I find that adding coconut water in place of water makes it so much more delicious! In this green smoothie I put: 2 cups harmless harvest coconut water, spinach, collard greens, half an avocado, 1 apple, 1 tbs chia seeds, and squeezed half a lemon in it. So far my favorite 👌

Who Knew Homemade Sauerkraut Was A Superfood/Probiotic?

I am back after a long break from posting on my blog. I have begun to learn about the benefits of eating an alkaline diet and thought it would benefit others to know this stuff too. Raw Sauerkraut is an extremely potent probiotic and superfood. Who knew?? I would have never thought it would be so advantageous for your health to eat daily. A few things I learned about this superfood:

*Sauerkraut provides a high-density source of a wide range of beneficial live lactic acid bacteria which assists in the digestive process.

*A phytonutrient in this vegetable (cabbage) significantly enhances your liver's detoxification ability. According to a study, eating these foods every day will half your risk of getting cancer.

How I made my homemade sauerkraut:

Chop up green cabbage and throw in a bowl. Sprinkle with sea salt and mix with clean hands. Pack it in little by little in a mason jar until its almost filled to the top. Leave a tiny bit of space to compact it in there (use a wooden spoon or something similar to pack it down tight). Use folded up leaves (save these from the cabbage before you start chopping) to stuff at the top of the lid. Fill the jar with filtered clean water (not tap) and store it in a room temp dark cupboard for at least 5 days. I just made my first batch! So yum. Here is a photo of it:


It is best to eat 1/2 cup before every meal to balance the PH in your body for better digestion and health. Enjoy!

Coffee or tea?

I really wanted my usual coffee with vanilla creamer (which I'm sure is loaded with all kinds of good things for me). But alas I opted for green tea instead. Not as much fun on a cold day like this...but hopefully I won't have that midday crash coffee always tends to give me. We shall see.
